Menu Plan 18th Week

This week I planned my menu and went to the store yesterday for all of the ingredients. Hopefully that will make it easier to actually go through with the menu.

I'm always trying to find new recipes that are meatless and easy, I've found one more this week that I'm going to try called Lentil Tacos. I saw this in the menu of a great blog called The Saved Quarter, the name got me interested so I looked up a recipe to try out.

This week most of the meals are meatless, I think this will make for a easy, money saving week.

Monday: Lentil Tacos
Tuesday: No-Bake Mac and Cheese
Wednesday: Ham Fried Rice and Scallion Pancakes
Thursday: Leftovers
Friday: Soup

Menu Plan 17th Week

I'm back to meal planning. I've been really slow getting back into my day to day routine after the holidays. Once again our dinners have suffered with no meal plan. We've eaten out a lot more and had lots of grilled cheese sandwiches and cereal for dinner.

I would like to start figuring out my meal plan on Saturday after I see what is on sale and then go to the store so I can get everything I need for that week. I didn't do that this week, I'll try for next week.

Monday: Tortellini, bread sticks and peas

Tuesday: Cranberry Chicken (new recipe, will post if good)

Wednesday:Soup (What kind should I make?)

Thursday: Leftovers

Friday:Thai Peanut Noodles

Saturday: Black Bean Burgers

Sunday: Not sure yet, I'll figure it out.

Menu Plan 16th week

My favorite meal from this past week was this Thai Peanut Noodle dish. We love to eat this in our house because it is a little different from our normal and very delicious. I always wish I had more the next day so I'm going to start doubling the recipe.

Menu Plan 15th Week


Have you tried the Brown Rice and Black Bean Burgers yet? They have become another family favorite in my house. They are easy to make and a lot healthier than a regular burger.

Menu Plan 14th Week

This week is going to be super easy. We will have two Thanksgiving dinners and I am not in charge of ether of them.

Menu Plan Monday 13th Week



Well I'm back to menu planning this week. Last Sunday I just didn't feel like trying to figure it out and we suffered last week. We definitely went out to eat more and didn't have very good meals when I did cook.

Oh and by the way, my husband made my new favorite cookies last night and I think we ate the whole batch in a matter of hours. SO GOOD.

  • Wednesday: Christmas Concert with family. I can't believe I'm going to a Christmas thing already.

Menu Plan Monday 12th Week

Make sure you check out the recipe for this AMAZING pan pizza I just posted. We wont be having it this week for dinner because I just made it two nights in a row.


Monday: Tortellini with leftover sauce (So easy if you use frozen Tortellini)

Tuesday: Salsa Chicken and Black Bean Soup ( I saw this recipe and really wanted to try it, I love soup)

Wednesday: Poppy Seed Chicken and rice (Family favorite, always hits the spot)

Thursday: Burritos of some kind (I'll make it up with some leftovers)

Friday: In Boise for a wedding

Saturday: Boise

Sunday:Steak and Potatoes

Menu Plan Monday 11th Week

My husband and I both got sick last week so the menu plan took a back seat. So this week I'll be doing a few of the same dinners since we didn't get to them.

Thursday: Baked salmon with Southeast Asian marinade

Menu Plan Monday 10th Week

This past week I tried this recipe for No-Bake Mac and Cheese. It is a healthier version with broccoli, no butter and only 1 cup of cheese. But I still loved it. I love Mac and Cheese and so does Addie in any form. I think this will be a keeper.

No-Bake Mac and Cheese

  • 8 ounces whole-wheat elbow noodles, (2 cups)
  • 1 10-ounce package frozen chopped broccoli
  • 1 3/4 cups low-fat milk, divided
  • 3 tablespoons flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 3/4 cup shredded extra-sharp Cheddar cheese
  • 1/4 cup shredded Parmesan cheese
  • 1 teaspoon Dijon mustard
  1. Bring a large pot of water to a boil. Cook pasta for 4 minutes. Add frozen broccoli and continue cooking, stirring occasionally, until the pasta and broccoli are just tender, 4 to 5 minutes more.
  2. Meanwhile, heat 1 1/2 cups milk in another large pot over medium-high heat until just simmering. Whisk the remaining 1/4 cup milk, flour, garlic powder, salt and pepper in a small bowl until combined. Add the flour mixture to the simmering milk; return to a simmer and cook, whisking constantly, until the mixture is thickened, 2 to 3 minutes. Remove from the heat and whisk in Cheddar, Parmesan and mustard until the cheese is melted.
  3. Drain the pasta and broccoli and add to the cheese sauce. Return to the heat and cook, stirring, over medium-low heat, until heated through, about 1 minute.

Menu Plan Monday, 9th Week

We are home from our cruise and slowly getting back to normal. Addie had a blast staying with Grandma and Grandpa, and probably didn't even notice we were gone. I was also able to relax and have a ton of fun; I only had to call once a day to make sure she was okay.
This weeks menu is pretty simple, I don't really feel like making big dinners yet. Fall weather is in full swing which means SOUP!

Monday: Pizza Night with family

Tuesday: Activity night, dinner is included

Wednesday: No-Bake Macaroni and Cheese with Orange Glazed Carrots

Thursday:Minestrone Soup and Bread

Friday: Baked Potato with Chili

Saturday:Mexican Beans and Rice with Southwestern Calico Corn

Sunday: Homemade Tomato Soup and Grilled Cheese

Menu Plan Monday, 8th Week


I am so excited because Sunday my husband and I leave for a five day cruise! I'm really scared about leaving Addie, I've never been away from her for more than one night. I'm going to go through withdrawal. On that note, if anyone has ever been to Key West or Cozumel and knows any great places to eat or/and suggestions on what to do there for a few hours let me know! I would love any recommendations!

Monday: Pineapple Pork Chops

Tuesday: Pancakes

Wednesday: Sweet Potato and Black Bean Burrito (still haven't tried these)

Thursday: Guiltless Fettuchini Alfredo with asparagus

Friday:Homemade Pizza

Menu Plan Monday, 6th Week


I know it still feels like summer outside, I know it is still way to hot to eat soup, BUT I love the Tomato Basil Soup from Zupas and I found this recipe I wanted to try that claims to be very close. I had to try it instantly. In fact I would have made it tonight except I didn't have a few of the ingredients, so I looked up the weather this week and planned it for the coolest night. I'll let you know how it goes.


Monday: Chicken California (Make extra one for neighbors)

Tuesday: Tomato Basic Soup, Bread Sticks

Menu Plan Monday, 4th Week

I'm keeping it pretty simple this week. I found a website that talks about 8 foods you should eat everyday, I'm going to try and start incorporating some of them into our menu. Black Beans are one of the items so they will be the star of dinner two nights.

Menu Plan Monday, 3rd Week

The best tip I could give someone who is going to start planning a weekly meal plan is to be flexible. Every week I end up changing our menu plan because sometimes our schedule gets crazy or I just don't want to cook. If this happens I usually move that meal to the next week because I already have the ingredients.

Monday: Pasta with Fresh Tomato Sauce

Tuesday: Cub Scout Pack Meeting with BBQ

Wednesday: Bowtie Chicken Cesar Salad (leftover noodles from Monday, leftover chicken from Sunday)

Thursday: Chicken Enchiladas

Friday: Date Night

Saturday: Sweet and Sour Chicken

Sunday: Pork chops on Potatoes

Menu Plan Monday, 3rd Week

Wow time flies, I can't believe it's been a whole week already. Here's my menu plan for this week. I'm going to try to post some of the recipes for these meals as I make them. I'm really excited for these recipes, they are some of my favorites.

Menu Plan Monday, 2nd Week

Alright, 2nd post for Menu Plan Monday. I'm pretty excited. Last week went pretty good, although I had to change a few things because we didn't know my husband would have to work late.

Monday: BBQ Chicken Salad
Tuesday: Macho Nachos (Recipe below)
Wednesday: Pork Chops with rice and spinach
Thursday: Lagoon with the Family
Friday: Homemade Deep Dish Pizza (the best recipe, sooo good)
Saturday: Eat out with friends
Sunday: Crock pot Chicken and Spagetti

Macho Nachos
This is one of those meals that is not healthy but it's easy and quick. Plus my husband LOVES it.

Ingredients:
Tortilla Chips
Can of Chili
Cheese
Any toppings you prefer. In our family we like:
Olives
Tomatoes
Onion
Green Peppers
Banana Peppers

Arrange chips in a dish (we like to use a pie plate). Heat up Chili in microwave for a few minutes, just until hot. While the chili is heating up prepare toppings and grate cheese. Layer chili onto of chips, add cheese and toppings. Place under broiler just to melt the cheese. Enjoy.

Meal Planning Monday



This week is my first Menu Plan Monday on this blog. Let me just say that I LOVE planning a menu every week. I enjoy going through all my recipes or trying new ones, I love planning out and making lists, and it makes my life SO much easier. I never have to worry about what to make for dinner that night. That being said I have to say, I haven't planned a weekly menu since June so I'm definitely not perfect but I hope posting it on this blog every Monday will make me better. I'm trying to keep the kitchen as cool as possible around dinner time so most of these dishes can be cooked in advance or require the crock pot.

Monday: Thai Peanut Noodles
Tuesday: Chicken Salad in Homemade pita
Wednesday: Guiltless Fettuchine Alfredo
Thursday: Leftovers
Friday: Shredded Pork Tacos
Saturday: Date Night?!
Sunday: Asian Salmon
